Why Me? I have a passion for fitness that comes from years of athletics and needing a strong body in order to complete practice or to finish strong in an important race. I found a natural inclination towards wanting to help others feel the same enjoyment of being fit and healthy, so began my career in personal training and fitness. I am blessed to do what I love every day!

Specialization in building lean body mass, weight loss, overall wellness, and sports conditioning programs. Integration of swim workouts, boxing, TRX training, yoga, outdoor sports and a healthy yet balanced diet. Having fun is a must and I'd love to try anything once!

Oh, the perks of being a waitress. Over 12 miles walked on my shift last night!

Nicki’s crazy butt is back, or should I say Roman is….

Great workout jam! I’ve had it on repeat all weekend long

This fruit smoothie is made with Greek yogurt to make it more satisfying and filling, as it has 2x the amount of protein found in regular yogurt.

It’s very easy to load a smoothie with unnecessary amounts of sugar. It’s best to stick to non-fat unflavored yogurt.  Also, ‘lite’ versions of juices (i.e. Trop50) are a better choice than those juices made from concentrate.  Frozen fruit can also be purchased as sweetened or unsweetened so pay careful attention in the grocery store if you want to choose healthy options.

Makes 3 (8 oz.) Servings:

  • 1 1/4 cup pineapple-orange juice
  • 1/4 cup vanilla coconut milk*
  • 1 handful frozen strawberries & bananas
  • I frozen fruit bar (I used creamy coconut)
  • 1/2 cup Greek Yogurt
  • Ice Cubes

*Why coconut milk?

Combine all ingredients into blender and blend on high until fruit thoroughly mixed in and ice crushed.  Pour into glasses to serve and add more fresh fruit to garnish if extra hungry!

We must train from the inside out. Using our strengths to attack and nullify any weaknesses. It’s not about denying a weakness may exist but about denying its right to persist.

Not bad for a Tuesday: 13,324 steps / 7+ miles / 1000+ Calories

See how Norman beat me (to the far right)? Grr! He had over 14,500 steps today (However, he only walked 0.02 miles further than me).  Tomorrow I will get him!

Ahhh, yes. -_-

Tired of buying the boxed variety and fully aware that [oats chocolate flour and sugar] ≠ healthy energy source, I decided to take matters into my own hands and throw together a little power bar of my own!

Take a peek! (Makes 15 Bars)

  • 3 cups rolled oats
  • 1 cup quinoa organic grain
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1 cup shredded coconut
  • 1/4 cup dried pineapple (or fruit of your choice)
  • 1/2 cup whole wheat flour
  • 3/4+ cup chocolate chips
  • 1/2 cup applesauce
  • 1/2 cup agave nectar
  • 1 cup coconut milk
  • 2 tsp vanilla

Cook quinoa according to directions.  Meanwhile, combine all of the dry ingredients into one large bowl.  Once quinoa is cooked, add to the pan the remaining ingredients.  Next pour wet ingredients into bowl of dry ingredients and mix together.

Spread mixture into greased 9 x 13” pan and bake for 20 minutes @ 350ºF. Cool and cut into pieces.
